BACK TO SCHOOL GRANOLA

Every Fall I struggle with healthy snacks that the kids will eat. This year I tested a girlfriends paleo granola recipe that I modified based on ingredients that my family loves and it was a hit! The best part is that you can make a big batch of it and it lasts for a month. It can be enjoyed over yogurt with some berries or eaten by the handful on the go!

  • Preheat oven to 275 °F.

  • In a large ceramic bowl add 6 cups of nuts and seed. I use pecans, pipits, pistachios, almonds, cashews, as well as chia and flax seeds.

  • Combine well and add cinnamon, nutmeg, and a dash of vanilla extract.

  • Melt 1 cup of coconut oil and 1/2cup of honey, drizzle on top and coat evenly.

  • Spread evenly on parchment paper lined baking sheet and cook for 20-25 min.
